Newborn piglets learn to run to their mothers’ voices and to recognize their own names. Mother pigs sing to their young while nursing.

Have you ever cuddled a piglet?

Imagine a squirming velvet bundle with pale pink skin, translucent sea shell ears and limpid trusting eyes that lock on yours like a human infant’s. This little piglet gazes into your eyes and as you croon non-sense lullabies her body relaxes, her eyes blink slowly closed and her snuffling snout puffs warm air onto your cheeks. And she sleeps trustingly in your arms. When wakes she’ll wriggle free to play with her siblings or nurse her Mama’s thick rich milk.

Why visit a Farm Sanctuary?

For me it broke my heart and healed it in one sun splashed afternoon. My dear friend Alison took us to visit the Woodstock Animal Sanctuary a couple of years ago. Her dear, delightful, incomparably beautiful sister Nancy hosted us at her traditional Bed and Breakfastthat is near to the sanctuary and fed us some of the best Vegan food around.

Meeting the animals and hearing the stories of their rescues opened all of our hearts. I felt particularly close to this dear hen who trustingly ate green grapes from my hand and let me stroke her silky feathers:

Pigs snuggle close to one another and prefer to sleep nose to nose. They dream, much as humans do. In their natural surroundings, pigs spend hours playing, sunbathing, and exploring. …pigs, like humans, enjoy listening to music, playing with soccer balls, and getting massages.” – Peta

When you sit at the table on Easter and your relatives and friends poke and prod you about why you are Vegan tell them the story ofSweet “Unsinkable” Molly Brown, who now lives at the Iowa Farm Sanctuary.

At just 21 days old, Molly was loaded onto a massive semi trailer with hundreds of other piglets and taken to a facility to be fattened up for slaughter. While the other piglets were pushed off the truck at the facility, Molly hid and went unnoticed. . While flooding the truck whith water to clean it, Molly floated out and was discovered, nearly drowned, and saved by an employee.

You can check on Molly’s progress on the Iowa Farm Sanctuary FB page, watch videos of the jokester Molly had become and donate to their worthy cause this Easter in the name of the voiceless piggies that aren’t rescued in time.

Maple glazed Vegan Ham Recipe for the Holidays

Prep Time

10 mins

Cook Time

1 hr

A make ahead Vegan seitan ham roast that makes for the perfect centerpiece on the plant based table. Brushed with a smokey maple syrup glaze and studded with cloves it is beautiful, delicious and cruelty free!

Course:Main Course

Cuisine:American

Keyword:Seitan,

Servings: 6 people

Ingredients

Smokey Sweet Maple Glaze

Caramelized Pineapple and Orange slices, optional

  • 1pineapple cored and sliced into rings
  • 2navel oranges sliced into 1/2 inch rounds
  • 1/3cupclovesfor garnish, optional

Instructions

Glaze

  1. Mix up all the ingredients to your glaze and set aside. It will be strongly flavored. Play with the balance of flavors to your own taste.

Vegan Ham Roast

  1. Heat your oven to 350 Fahrenheit.

In a large bowl stir together the dry ingredients (the first 7 ingredients) until combined.

In another bowl stir together all the the wet ingredients (tahini trough vegetable broth) until smooth.

  2. Pour the wet into the dry and stir until a dough forms. I like to do my kneading in the stand mixer with a dough hook but you can knead it by hand as well. If you re using the stand mixer the place the dough in the stand mixer and allow it to knead with the dough hook for 6 minutes on medium speed. I think the texture is much better when I use the stand mixer. It makes for a denser loaf.

If you are kneading by hand then you will need to knead for 10 minutes until the dough is super dense and rubbery.

  3. Here is how I got my ham shaped vegan ham. I rolled my seitan dough into a ball and placed it on a square of plastic wrap. I then enclosed it and pulled the plastic tight around it until it was a smooth roast like soap. I then removed it from the plastic, brushed it with 1 tablespoon of the marinade and wrapped it tightly in aluminum foil. The dough will try to expand during baking and I find the more I constrict its "rise" the denser and toothsome the final texture.

  4. Bake for 50 minutes at 350, turning every 15 minutes to ensure even baking. Remove from oven and allow to cool completely. You can store it at this point wrapped in the refrigerator for up to 5 days.

  5. Once completely cool, score the outside of your Vegan ham into a diamond pattern with a sharp knife and insert a clove into the center of each diamond. See photo. Place the roast on a baking pan and surround with sliced pineapples and oranges. Brush with glaze.

  6. Bake 15 minutes at 375 Fahrenheit brushing with glaze as often as possible until fully heated. If you desire a brown exterior the place under the broiler on high for 4-5 minutes. Serve with any extra glaze.

FAQs

What is glazed ham made of? ›

The glaze I went for is a combination of butter, brown sugar, honey, Dijon mustard (adding a nice tang to the ham) and crushed garlic cloves. From here you can add in spices like the traditional ground cinnamon and ground cloves, or leave them out.

How to cook Christmas ham Gordon Ramsay? ›

Method. Put the gammon into a large saucepan and pour on enough cold water to cover. Add the carrots, leek, onion, peppercorns, coriander seeds, cinnamon stick and bay leaves. Bring to the boil, turn down to a simmer and cook for 3 hours, topping up with more boiling water if necessary.

What cut of meat is used for glazed ham? ›

Honey Glazed Ham Ingredients

Ham: I opted for a shank cut (the leg). The shank end is what most holiday hams are, so it's a good choice if you want a beautiful presentation. The meat tends to be fattier and it has one long bone, which makes carving easier.

Is a glazed ham already cooked? ›

Remember, the ham is already cooked, so all we're doing here is warming it back up again with the glaze. Use a meat thermometer and warm it to 110°F to 120°F.

Do you glaze a ham covered or uncovered? ›

After the ham has cooked for 1 1/2 to 2 hours, brush the surface with some of the glaze. Then pop it back into the oven, uncovered, for another 20 minutes or so.

Do I cover ham when I glaze it? ›

Cover loosely with baking/parchment paper then loosely with foil. Reheat in a 130°C oven for 2 hours or until the centre of the ham registers 60°C/140°F (or a skewer inserted into the middle is hot). Add water as needed to prevent pan juices from drying out (we want a syrupy sauce at the end to serve with the ham!)

Do you cover glazed ham with foil? ›

If you don't cover your ham while cooking it will quickly dry out. Instead: Put some aluminum foil over your ham while it's cooking. It is recommended that the ham is covered for at least half of the cooking process and only removed during the last half when you glaze it.

How does Martha Stewart bake a ham? ›

Preheat oven to 325 degrees. Wrap ham completely with parchment-lined foil and place on a rimmed baking sheet or roasting pan. Transfer ham to oven and bake 1 1/2 hours. Unwrap ham; discard parchment and foil.

What is the best ham for Christmas dinner? ›

Shank or Butt

Shank: Ham from the shank end is the picturesque ham profile that pops into most people's heads when they think of a Christmas ham. The pork comes from the leg portion of the pig and tends to be a bit leaner. Bone-in ham from the shank has one long bone, which can make carving a breeze.

How do you make sliced ham taste better? ›

Peach preserves, hot pepper jelly, and maple syrup work as sweet bases for glazes that add sheen as well as distinct flavor. Tasty additions such as aromatics, herbs, and spices switch up a traditional ham and make it truly memorable.

What part of the pig is glazed ham? ›

Ham is a type of pork that comes from the hind leg of a hog. Ham can be preserved and prepared in many different ways. Like many other cuts of meat, ham can simply be roasted with the bone either in or out. However, ham can also be pre-cured and cooked in a wide variety of ways to make it a prepared ham.

What is a glazed ham? ›

A meat topping that is spread over a Ham prior to baking in order to enhance the flavor of the meat after it has finished baking and to help keep the Ham moist and tender in texture. Typically, a Ham Glaze will be thick and somewhat gummy in texture, but always pourable or spreadable.

What is the point of glazing ham? ›

Cook's hint: To speed things up, you can score and stud the flesh 24 hours ahead of time then cover with the removed skin. Cover with plastic wrap and refrigerate until ready to glaze and cook. Cooking: As the ham is already cooked, the purpose of glazing is to add your own flavour notes and to caramelise the fat.

What ham to buy for glazed ham? ›

Look for a fully-cooked, bone-in ham that isn't spiral cut—it stays juicier in the oven! Shank-end hams are the big, beautiful ones you're used to seeing for the holidays and those work great here. Just remember to do the math on how much ham per person is needed before you put in your order with the butcher!
