Remember when you were younger and you’d make fun of old people talking about their bowel habits? I’m there. My friends and I talk about our bowels and our bladders and how we needheartburn Tablets and other medicines for the things that ail us, and we are all glad we’re right where we are, for the most part anyway. I noticed a few years ago that I had this constant burp in my throat. It settled right where the base of my throat is. As soon as I would burp, there would be relief for a solid three seconds and then the bubble would come back. It came and went and because it wasn’t a daily occurrence, I kind of ignored it.

Until last year, that is. Last year I drastically changed my diet and for the first few months I had that nasty bubble in my throat all the time. It was so bad I finally did a Google search for “Why is there a bubble in my throat”. I couldn’t find much so I googled “What is this bubble in my throat”. Dr. Google told me it was heartburn so I laughed and laughed.

So during one of my monthly check ups with my endocrinologist, I mentioned this annoying bubble because it often felt like it was choking me and I was certain I had a throat tumor or elephantitis of the vocal chords.

When I told them about it, they told me that it was heartburn and to just buy some antiacids for heartburn. I laughed and laughed and went home and pressed the bubble in my throat. No way, dude. I’m too young for heartburn, and doesn’t it feel like fire in your throat? No way this was heartburn.

A couple weeks later I was talking to my dad on the phone and he mentioned having to go to the doctor for heartburn. He said he had had it since he was young and that his mom, my Mamom had it, and that it’s hereditary. I pressed the bubble in my throat with my fingertips and asked him what heartburn felt like. His response stunned me.

“It used to feel like a bubble stuck in my throat but now it feels like a fire.”

Spicy Spaghetti Squash Alfredo

This delicious spaghetti squash side item has a kick that's just enough to keep your gathering interesting. Spicy spaghetti squash alfredo is the perfect accompaniment to any meat and a perfect side dish.

Ingredients

Spaghetti Squash

  • 1 Spaghetti Squash

Sauce

  • 1 stick Salted Butter
  • 1 cup Heavy Whipping Cream
  • 2 cups Parmesan (MUST be freshly grated, do not use pre-shredded)
  • 1 teaspoon Smoked Paprika
  • 2 teaspoons Cayenne Pepper (You can increase or decrease this amount according to your tastes)

Spaghetti Squash
Step 1

This part is up to you. A roasted spaghetti squash is sweeter tasting but takes an hour. A microwaved spaghetti squash takes about 13 minutes but you have to really get a lot of holes in it to make sure it doesn't explode. Here's the scoop on both:

To Roast: Option A: Poke holes in spaghetti squash and roast whole at 350* for 1 hour. Allow to cool for about 10 minutes before cutting open and removing seeds. Carefully remove seeds then use fork to pull strands out of the squash. Option B (for people with sharp knives) Cut off both ends and cut in half lengthwise. Scoop out seeds and Rub with olive oil and place face side down on a baking sheet. Bake at 350* for an hour. Use fork to pull the strands out of the squash.

To Microwave: Poke a butt-ton of holes in your spaghetti squash with a fork making sure the tines go all the way into the squash. My rule of thumb is four to five stabs down the length of the squash all the way around the squash. Lots of stabs. Imagine your worst day ever while attacking your squash. It helps. Place the squash in a dish and cook it in the microwave for 13 minutes. Allow to cool slightly before cutting in half lengthwise to carefully remove seeds from the inside of the squash. Use fork to pull the strands out of the squash.

Sauce
Step 2

Over low heat, melt butter into heavy whipping cream. Do not rush this process, the butter will separate. Low and slow is the key.

Step 3

Turn burner off and whisk in cayenne, smoked paprika, and salt. When fully combined, stir in parmesan until thick sauce forms.

Step 4

Scoop spaghetti squash into a bowl and pour one cup of alfredo sauce over the spaghetti squash, tossing to combine. Put the remaining alfredo sauce in a gravy bowl and serve on the table so guests can add more sauce should they want or need it.
